Recipe – Almond Coconut Cookies

When it comes to eating healthy, the thing most people struggle with is giving up the foods they love. The truth is that you really don’t have to. With the proper planning you can prepare delicious nutrition packed snacks that taste just as great as your old friends, if not better! These almond coconut cookies are perfect for that exact reason. People love cookies in all shapes and form, so I found this recipe on Joyous Health that really interested me because not only are they easy to make, but they taste AMAZING! On top of that, they are a source of Vitamin C, E, calcium, magnesium, potassium, antioxidant flavanoids, along with great sources of fat to keep you full and not sending your blood sugar sky high. I use these as a snack or for part of breakfast since they aren’t really too sweet. Here’s all you need to make these awesome little snacks:

  • 1-3/4 cups of almond flour
  • 1 cup of rolled oats
  • 1/2 cup of coconut flakes
  • 1/4 cup of sesame seeds
  • 1/2 cup of sucanat sugar
  • 3 organic eggs (larger)
  • 2 tbsp of almond butter
  • 1/4 cup of organic coconut oil

All you need to do is mix all the dry ingredients in one bowl, and all the wet ingredients in another. Then combine both bowls and mix as well as you can. After that just heat the oven to 350 degrees and let bake for 10-12 mins. Simple as that! I found this recipe made me 2 dozen, and eaten at 2 per day they last a while! Give them a shot!
